Sweet Potato Muffins

  • 1 tablespoons butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 3.5 cup sifted all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 4/3 cup evaporated or regular milk
  • 3 cups peeled finely shredded sweet potato 

These turned out really good! My visiting taste-tester agreed that
(a) they are better than the average use for sweet potato and (b) they
go really well with leftover cinnamon frosting!
